Vargas Cut and Catch is located in the building formerly known as 21, Vargas’ cocktail and wine bar. Situated across from Vargas’ first restaurant, the famous Rudy & Paco Restaurant and Bar, the family’s children, Juan Vargas and Denise Vargas-Escobar run this contemporary steakhouse.
The menu exudes an extensive wine list and a variety of high-end steak and seafood dishes for every customer’s taste buds. Vargas carries only USDA prime steaks, Wagyu beef sourced right here from Texas and the freshest seafood available. There’s even something for the kiddos, such as mac ’n’ cheese named for Vargas’ granddaughter Sofia.
For an even more personalized experience, customers may purchase an engraved steak knife, which is prominently displayed and housed behind a beautiful glass case, so they can enjoy their meal with their same knife each visit.
The restaurant’s signature dessert is The Paco Dome. The dish consists of house-made roasted cinnamon ice cream on a chocolate coffee cake hiding under a chocolate dome, which is then unveiled by a hot chocolate sauce poured table side.

The restaurant has weekly dinner specials as well as an amazing happy hour, from 4 p.m. to 6 p.m. Monday through Friday at the bar. Vargas’ executive chef has created a happy hour food menu exclusively for guests at the bar.
For exclusive or private dining, Vargas Cut and Catch has you covered. The EJP room, which seats up to 16 guests, is a private room that is perfect for special events or business meetings. The room is equipped with a 65-inch HD television, used for videos or presentations. For smaller groups, experience the smells and sounds of the kitchen at the Chef’s table. These four exclusive bar tops next to the open kitchen feature a special menu created for you and your guests. These are by reservation only, so be sure to book in advance.
