Flounder is a mild-tasting flaky fish that works well in many different dishes, including simply prepared fillets baked with lemon pepper and garlic seasoning. Flounder also is excellent to use for fish tacos and even more delicious when the tacos are topped with pico de gallo, red cabbage and guacamole and a squeeze of lemon.
Speckled trout is a delicate, mild-tasting fish. And it’s a popular fish among area anglers. A common way to prepare it is by deep-frying fillets and seasoning them with cornmeal, salt, pepper and Old Bay Seasoning mix.
